Spicy Thai Cucumber Salad Spicy Thai Cucumber Salad Dressing 1/4 c rice wine vinegar 1/4 c sugar 1/2 t salt 3 T water Salad 2 cucumbers, preferably English or hothouse cucumbers, halved lengthwise and thinly sliced 1/2 small yellow sweet onion, finely chopped 10 fresh mint leaves, chopped 1 fresh red chili pepper, thinly sliced or 1 t Sambal chili paste 6 fresh cilantro sprigs, chopped 2 T roasted peanuts, chopped (for garnish) Combine dressing ingredients and blend well. Add the rest of ingredients, except peanuts, and let sit for 30 minutes. Garnish with chopped peanuts and serve.
