Caramelized Pear and Baby Greens with Pine Nut Dressing

2 ripe bosc pears
Juice of 1 lemon
1 oz butter
4 oz soft to semi soft cheese- talleggio, brie, stilton, etc
8 oz baby greens, washed and dried well
1 oz pine nuts
3 T sugar
4 T olive oil
1 T champagne vinegar
several grinds fresh ground black pepper

Peel, halve and core pears. Cut each pear into 6-8 wedges. Rub with lemon juice. In a 12 inch saute pan, heat butter on medium heat. Place pears in the pan in one layer. Sprinkle with sugar. Turn heat up slightly to brown pears on each side, about 3 minutes per side. Turn off heat and set aside for 19 minutes until juice of pears is released.

Place pine nuts in a small pan over medium high heat and toast for 5 minutes until lightly browned, shaking pan often. Place browned nuts in a small bowl along with the olive oil and vinegar. Whisk until thickened. Add juice from the pears to dressing. Whisk again. Toss salad greens with the dressing. Toss in pears and cheese. Serve.
