Cranberry Compote

Cranberry Compote

1 cup dry red wine
3/4 to 1 c sugar
1/2 cinnamon stick
Zest of 1 orange
3 cups fresh cranberries, washed and picked over

Bring red wine, sugar, and cinnamon stick to a boil in a heavy bottomed non-reactive saucepan, stirring often to dissolve sugar. Turn heat down to a simmer and simmer wine mixture 3 minutes.

Add cranberries and orange zest. Simmer mixture 10-15 minutes, stirring often, until most of the cranberries pop. Let cool slightly and pour into a serving bowl. Keep refigerated until ready to use. It will firm up a bit in the regigerator.
