Escape to the islands with this tropical blend of coconut milk, mango, pineapple, and banana.

Ingredients

  • ¼ (35 g) medium orange, peeled
  • ¾ cup (180 ml) water
  • ¼ cup (60 ml) light coconut milk
  • 1 small lime, peeled
  • ½ (65 g) banana, peeled
  • ½ cup (80 g) frozen mango
  • 1 cup (150 g) frozen pineapple chunks
  • 2 cups (260 g) ice cubes

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed.
  3. Blend for 30 to 45 seconds, using the tamper to push ingredients toward the blades.

This thick frozen smoothie is a so refreshing during the summer months. Have a group over for brunch double this recipe in the 64 ounce container.

Banana Blueberry Orange Smoothie

Kids love the delightful purplish color of this refreshing snack! Just add ice to turn it into a delicious sorbet.

Ingredients

  • 3 cups (720 ml) water
  • 4 Tablespoon (520 g) medium orange, peeled
  • 4 Tablespoon (400 g) small frozen bananas, peeled
  • 1½ cups (320 g) frozen blueberries

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed.
  3. Blend for 45 seconds or until desired consistency is reached, using the tamper to press the ingredients toward the blades.

The Vitamix makes quick work of the whole foods. If using a fresh banana, add up to 1 cup (130g) ice cubes.

Fresh Lemonade

A refreshing summertime staple, this lemonade recipe combines just a few ingredients. Garnish with a lemon slice for an added touch.

Ingredients

  • 4 cups (960 ml) water
  • 1 strip lemon peel
  • 1 lemon peeled, halved
  • 2 Tablespoons honey, or other sweetener, to taste
  • 1 cup (130 g) ice cubes

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10.
  4. Blend for 30 seconds.

Summer Splash Smoothie

Melons, peaches, and pineapple bring the taste of summer in a juicy smoothie.

Ingredients

  • 1 cup (240 ml) water
  • 6 slices (340 g) honeydew melon, peeled, havled
  • 4 (160 g) slices of cantaloupe, peeled, halved
  • 2 (350 g) large peaches, halved, pitted
  • 6 (300 g) slices of pineapple, peeled
  • 2 cups (260 g) ice cubes

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed.
  3. Blend for 40 seconds or until desired consistency is reached, using the tamper to press ingredients toward the blades.

Beet, Strawberry, Cranberry Smoothie

With its bright red color and sweet cranberry/strawberry flavor, this smoothie makes it easy to fit the long-neglected beet into your menu.

Ingredients

  • 2½ cup (540 ml) cranberry juice
  • ¾ cup (75 g) cranberries
  • 3 small (150 g) beet, cooked
  • 1 cup (140 g) frozen strawberries
  • 2 Tablespoons honey, or other sweetener, to taste
  • 2 cups (270 g) ice cubes

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Start the machine, and increase to its highest speed.
  4. Blend for 1 minute or until desired consistency is reached. Serve immediately.

The consistency of this smoothie will turn out as more of a juice drink.

Sweet and Sour Cucumber and Watermelon Salad

A bright, fresh side dish perfect for any summer picnic or cookout.

  • 1 cup (240 ml) apple cider vinegar
  • 12 Tablespoon (180 g) dates, pitted, or 1 cup honey, optional
  • 2 teaspoons kosher salt, optional
  • ½ teaspoon ground black pepper
  • 2 Tablespoons sesame seeds
  • ¾ cup (40 g) green onions, root trimmed, sliced thin
  • 6 cups (900 g) watermelon, peeled, diced
  • 4 Tablespoon (1.2 kg) cucumber, peeled, diced

Directions

  1. Place vinegar, dates, salt and pepper into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 30 seconds or until ingredients are well combined.
  3. In a large mixing bowl, toss sesame seeds, green onions, watermelon and cucumber with the blended dressing. Allow to marinate for 15-20 minutes before serving.

Apricot-Ancho Barbecue Glaze

The perfect combination of sweet and spicy, try this barbecue glaze with grilled shrimp, pork or chicken.

Ingredients

  • 6 strips bacon
  • 1 (200 g) large onion, peeled, diced
  • 1 garlic clove
  • ¾ cup (180 ml) ketchup
  • 1 medium orange, or 3/4 cup orange juice, peeled, halved
  • 10 dates or 3/4 cup dark brown sugar, pitted
  • ¼ cup (60 ml) malt vinegar
  • 2 ancho chiles
  • 1 teaspoon paprika
  • 1 teaspoon dry mustard
  • 1 teaspoon Tabasco sauce
  • 1 teaspoon ground cayenne pepper
  • 2 teaspoons salt, optional
  • 1 teaspoon ground black pepper
  • 1 cup (120 g) fresh apricots, or canned apricots, drained, pitted

Directions

  1. Sauté the bacon in a large sauté pan over medium heat until almost crisp, about 4 minutes. Add the onions and sauté until browned, about 5 minutes. Add the garlic and sauté until aromatic, about 1 minute
  2. Add all the remaining ingredients. Simmer until the apricots are soft, about 10 minutes. Taste the sauce and season with additional salt and pepper, if needed. Allow to cool slightly.
  3. Transfer sauce to Vitamix container and secure the lid.
  4. Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients toward the blades. Blend for 30 seconds
This glaze can be cooled and stored in a covered container in the refrigerator for up to a week.

Caribbean Dry Rub

Make amazing jerk chicken with this sweet and spicy rub. Allow to sit on raw meat for 10-15 minutes before cooking to maximize flavor.

Ingredients

  • ¾ cup (165 g) dark brown sugar, packed
  • 2 Tablespoons salt
  • 2 Tablespoons dried thyme
  • 1 teaspoon ground allspice
  • 2 teaspoons crushed red pepper flakes
  • 1 teaspoon garlic powder
  • ½ teaspoon ground cloves
  • ¼ teaspoon dry mustard

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 10 seconds.
  5. Rub on raw meat. Let sit for 10-15 minutes before cooking.

Donuts

This traditional-style donut will satisfy anyone’s sweet tooth, and leave you wanting just one more!

Ingredients

  • 3 cups (960 ml) vegetable oil, for frying
  • ⅔ cup (150 ml) room temperature buttermilk
  • ¼ cup (50 g) granulated sugar, or Date Syrup to taste
  • 1½ teaspoon instant yeast
  • 6 Tablespoons room temperature water
  • ¼ cup (60 g) melted butter
  • 1 large egg
  • 4 cups (455 g) all-purpose flour
  • 1 teaspoon (3 g) salt, optional

Directions

  1. In a high-sided sauté pan, add oil and place over medium heat until you reach 350°F (175°C). Use a deep fry thermometer to ensure the temperature stays constant.In a small bowl, combine buttermilk with sugar and yeast. Let sit for 5 minutes to allow yeast to bloom.
  2. Place water, buttermilk mixture, butter, and egg into the Vitamix container in the order listed and secure lid. Select Variable 1, start the machine, and slowly increase to its highest speed. Blend for 10 seconds, or just until combined.
  3. Stop the machine, remove the lid, and add flour and salt.
  4. Secure the lid and select Variable 7. Pulse 4 times.
  5. Stop and scrape the sides of the container with a spatula, then secure the lid.
  6. Select Variable 7 and Pulse 9 more times, until a ball forms and dough separates from the sides of the container.
  7. Place dough in a lightly oiled bowl, and cover with a damp towel. Let rise in the warmest part of your kitchen, until the dough had doubled in size for about one hour.
  8. Dust a work surface with flour, and roll out dough to about ½ inch (1.2 cm) thick.
  9. Use a large round ring mold to cut out the donuts, and a small ring mold to cut out the holes.
  10. Fry donuts one at a time in the prepared sauté pan, about 2 minutes on each side or until golden-brown.
  11. Let cool on a wire rack, and top with your favorite icing.

Elote Mexican Street Corn with Homemade Mayonnaise

Corn is amazing any way you prepare it, but this rendition offers a playful handheld treat. The homemade mayo is so simple and great to have on hand for a variety of dishes.

Ingredients

  • 5 large pasteurized egg yolks
  • 2 Tablespoons fresh lemon juice
  • 1 Tablespoon lime juice
  • 1½ teaspoon dry mustard
  • 1 garlic clove, minced
  • 1 teaspoon (3 g) salt, optional
  • ¼ teaspoon ground black pepper
  • 1 cup (240 ml) canola oil
  • 6 ears of corn, grilled
  • ¼ cup (45 g) crumbled queso cheese

Directions

  1. Place egg yolks, lemon juice, lime juice, mustard, garlic, salt, and pepper into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1, start the machine, and slowly increase speed to Variable 5. Blend for 10 seconds.
  3. Reduce speed to Variable 3 and remove the lid plug. Slowly pour oil through the lid plug opening. Secure lid plug.
  4. Slowly increase to machine’s highest speed and blend for 15 to 20 seconds, or until emulsified.
  5. Brush mayonnaise mixture onto warm grilled corn and sprinkle heavily with crumbled cheese.

Pineapple Whole Fruit Juice

Turn fresh pineapple chunks and ice cubes into a refreshing, whole-fruit juice.

Ingredients

  • 2½ cup (400 g) pineapple, peeled, core included
  • 1 cup (130 g) ice cubes

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Start the machine, and increase to its highest speed.
  4. Blend for 1 minute or until desired consistency is reached.

Chef's Notes

Pineapple naturally froths when blended. A couple of tricks to reduce frothing are to finish the blend on low speed for 15 seconds or strain the mixture through a sieve. Note this will remove fiber from the beverage. For a thinner consistency add some water or maybe boost the flavor and nutrition with Coconut water. Double this recipe in the 64lp or 64 traditional container and store in an air tight contianer for up to 5 days. You may also freeze the juice to use at a later date.

Mint Limeade

This quick and easy lemonade is a welcome treat, especially on hot summer days. Get creative and try different flavor combinations that will pair easily with this lemonade recipe as a base.

Ingredients

  • 1½ cup (350 ml) cold water
  • 2 limes ends trimmed and discarded, remainder cut into 4 equal slices (about 1¼-inch [6-mm] thick each
  • 10 other mint leaves
  • ¼ cup (50 g) granulated sugar, or Date Syrup to taste
  • 2 cups (260 g) ice cubes

Directions

  1. Place all ingredients into the Vitamix container in the order listed and securethe lid.
  2. Select the lowest setting. Start the machine, slowly increase to its highest speed, and blend for 30 to 45 seconds.
  3. Serve with extra ice if desired.

Chocolate Peanut Butter Iced Coffee

This treat combines two great flavors and creates a unique frothy texture made especially easy with the Vitamix aerating container. The bonus ingredient is coffee, which adds an extra kick of caffeine to get you through your day.

Ingredients

  • 1 cup (240 ml) cold brew coffee
  • ½ cup (120 ml) almond milk , or milk of your choice
  • 2 Tablespoons (16 g) unsweetened cocoa powder
  • 2 Tablespoons (33 g) creamy peanut butter
  • 1½ cup (195 g) ice cubes, plus additional as needed for serving

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed and blend for 30 seconds. Serve over extra ice if desired.
Chef's Notes

The aeration container allows this drink to be bold and chilled by cooling it with ice that does not become pulverized or crushed. Try adding 1/2 teaspoon of ground cardamom or cinnamon to this blend if your taste buds are feeling adventurous!
